Lentil Soup

INGREDIENTS

  • 2 cups lentils, pre-soaked and drained

  • 5 cups water

  • 1 medium onion, chopped

  • 1 carrot, diced

  • 2 stalks celery, sliced

  • 1 clove garlic

  • 1 tsp salt

  • ¼ tsp black pepper

  • ½ tsp oregano

  • 1 pound tomatoes, diced

  • 2 tbsp cider vinegar

  • 1 tsp turmeric

DIRECTIONS

Place all ingredients in crockpot. Mix together well. Cover and cook on low 8-10 hours.

Before serving, season to taste. Serve with chips or place over rice/noodles

TIPS

Green lentils stay a bit crunchy but very good!
